Painted in 1869.

Bavarian strawberries
Biscuit Base:
300 g biscuits (Mc Vities for me)
100g melted butter
Preheat oven to 180.
Mix the biscuits and add the liquid butter. Mix so as to have a homogeneous mixture.
Divide a disc.
Strawberry mousse:
500 g of strawberries
80 g of powdered sugar
2 tbsp icing sugar
40 cl of fresh whipped cream
6 sheets of gelatin (1 CC agar)Strawberry Frosting mirror:
130 g strawberries
90 g of powdered sugar
Gelatin 3.5 (1CC agar)

Wash the strawberries. Meanwhile, soak the gelatine leaves in a bowl of cold water.
Mix strawberries and powdered sugar. Pour half the sauce into a saucepan and boil.
Add drained gelatine or agar agar and stir. Off the heat, add the remaining sauce and mix.
Let refresh.
Go up the cream with the icing sugar. Add the cold coulis and whisk without breaking the whipped cream.
Spread the foam on the cold biscuit and book fridge 2H minimum.
